Slice the bananas and place in a freezer bag or container. Freeze completely, for a minimum of 6 hours (I like to do it overnight).
Move the frozen banana slices to a blender or food processor, along with the cocoa powder.
Blend or process until you have a soft serve like consistency.
Fold in any ice cream add ins.
Move to a freezer container, smooth over the top and cover with plastic wrap, pushing down to ensure there is no air between the plastic wrap and the ice cream.
Freeze for 2 hours, then scoop and serve with your favorite toppings.
