This Leftover Ham Breakfast Skillet is great after the holidays, and the perfect way to use up any leftover holiday ham!You can also use deli sliced ham in this recipe, or diced ham that you can pick up at the store. So don't worry if you don't have leftovers, you can still easily make this ham breakfast skillet. Special Tip: Ham can be very salty, so if you're looking to lower the sodium you can soak the ham in cold water for 1 hour then drain and cook. You can also omit the salt from the recipe or the Homemade Ranch Seasoning as well.
Preheat a skillet over medium heat, spray with olive oil.
Add the onions and cook for 5 minutes.
Meanwhile, add the diced potatoes to a microwave safe bowl, and microwave for 2 minutes. Then add the cooked potatoes to the onions (this will soften them faster, while still giving your the crunchy bits you'll want).
Add the Ranch Seasoning (or just season with salt and pepper), the leftover ham and toss together.
Cook until the onions have softened and the potatoes have become golden brown with some crispy edges (about 5 minutes).
Make 2 wells to crack the eggs into, then carefully crack the eggs into the wells (I find that cracking them individually into a small bowl then sliding them into the wells ensures no shells get into the hash).
Cover and cook for 4-5 minutes until the eggs are set and the yolks are runny, cook for an addition 2-3 minutes for set yolks.
Sprinkle with green onions, and serve hot.
