In a skillet over medium heat, cook the bacon to desired doneness (approximately 5 minutes each side) . Drain to a paper towel and once cooled, crumble.
Meanwhile, to a medium bowl, combine the wedge salad dressing ingredients, and mix well. If you like a thinner dressing, add 1 tablespoon of water at a time until you have reached your desired consistency.
Remove the outer leaves of the lettuce, then chop the head of lettuce in half and then half again, making 4 wedges.
Cut off the ends to remove the stem.
Add the wedges to plates and top with the blue cheese wedge salad dressing.
Sprinkle over bacon crumbles, tomato, and onions, and serve cold.
