Add the beef and 1 tablespoon flour, salt & pepper to a bowl and toss together.
Heat a sauce pan over medium high heat, spray with olive oil. Add the beef to the pan small batches, cook each until lightly browned (about 2 minutes). Remove from pan to a plate.
Lower heat to medium and add onion. Cook 4-5 minutes until soft.
Add mushrooms & garlic and cook until softened, about 2-5 minutes more.
Add butter and melt, then stir in 1 tablespoon of flour and mix together.
Add broth, Worcestershire sauce, dijon mustard, and thyme. Bring to a boil, then reduce heat and simmer 5-10 minutes. until the sauce has thickened.
Add beef and any juices from the plate to the pan. Cook 2-5 minutes until heated through.
Remove from the heat (very important) and add in the Greek Yogurt. Mix together and serve immediately.
