This Turkey Meatloaf Recipe is both low in calories, and gluten free! You can use this meatloaf turkey recipe to make mini meatloaves as well as a turkey meat loaf.
Preheat the oven to 350 degrees F. Oil a loaf pan with 1 teaspoon of olive oil, or olive oil baking spray. If you don't have a loaf pan oil, use a rimmed baking sheet.
In a large skillet, heat a teaspoon of olive oil over medium-high heat. Add the onion and bell pepper and sauté for 5 to 10 minutes, until soft. Add the garlic and continue to sauté, for 1 to 2 minutes, or until soft. Set aside.
In a large bowl, add the cooled onion mixture and the remaining ingredients except for 1/4 cup of the BBQ sauce. Mix with your hands until just combined (over mixing will make a tough meat loaf).
Transfer the meat mixture to the loaf pan and shape it into a loaf. (If you're using a baking sheet just mold the meat loaf into a log shape.) Top with the remaining BBQ sauce.
Bake for 1 hour, or until the internal temperature is 165 degrees F. Let the meat loaf rest for 10 minutes, then cut it into eight slices and serve.
Mini Meatloafs
Oil 8 muffin cups, instead of a loaf pan.
Add the prepared turkey meatloaf mixture to the cups, and bake for 45 minutes, or until the internal temperature is 165 degrees F. Let the mini turkey meatloaves rest for 10 minutes, then remove from muffin tins and serve.
