1(12 oz box) tri-color rotini pasta (or gluten free)
1pintgrape tomatoeshalved
2cupscucumberchopped
1red bell pepperchopped
1cupblack and/or green olivessliced
¼cupsliced red onion
Pasta Salad Dressing:
1tablespoonolive oil
Juice of 1 lemon
1teaspoonItalian seasoning
1teaspoongarlic powder
½teaspoononion powder
½teaspooncrushed red pepper(optional)
¼teaspoonsalt
¼teaspoonpepper
Instructions
Cook pasta according to package instructions to al dente.
Meanwhile, add all of the Pasta Salad Dressing ingredients together in a bowl or jar. Whisk or (if using a jar) cover and shake well.
Drain the pasta, rinse with cold water and set aside to cool completely.
Add the pasta to a large bowl, add tomatoes, bell pepper, olives, cucumber, and red onion.
Pour dressing over and toss together until everything is coated in dressing.
Cover and chill at least 30 -60 minutes before serving. Add 2 tablespoons of water and toss together again before serving (the pasta will have soaked up the dressing).
