This easy recipe for berry pie can be made in just 10 minutes… it’s the “cooling” that takes the most time. So you can make this fresh raspberry pie quickly and let it set in the fridge until you’re ready to serve… so easy!

The best raspberry pie recipe below cuts half of the sugar from traditional recipes. Instead we celebrate the whole berry and simply make a raspberry pie filling to pour over mounds of fresh berries.

You can bake the pie crust ahead of time, or if you’re using a precooked pie crust you can skip the first step all together.

How to Make Raspberry Pie:

  1. Bake the pie crust according to package, then cool completely.
  2. Meanwhile, add 1 cup of raspberries and 1/2 cup water to a saucepan. Cook over medium heat, stirring often, until raspberries soften, about 5 minutes.
  3. Strain raspberries through a fine mesh sieve, into a bowl. Discard the seeds and add the mashed raspberries back into the sauce pan along with the sugar.
  4. In a medium bowl, combine the cornstarch and 1/8 cup water. Mix together until the cornstarch is dissolved. Add to the sauce pan with the mashed berries.
  5. Heat raspberry mixture over medium heat, stirring until thickened, about 5 minutes. Stir in lemon juice and turn off heat.
  6. Allow raspberry sauce to cool completely to room temperature.
  7. To the baked pie crust, add the remaining 3 cups raspberries. Pour raspberry sauce over berries and chill for an hour, until set.
