I make all my lasagna recipes easy, and this one just requires a bit of chopping… that’s the extent of the work in making this healthy lasagna!

You can make this recipe a vegetarian lasagna by swapping out the sausage for 1 cup of diced eggplant. Just be sure to sweat the eggplant before you add it to the mix. (I’ll give directions for that below!)

This vegetable lasagna has a healthy amount of turkey sausage to add protein and lots of flavor. It also infuses the mushrooms and zucchini (which both have a meaty consistency when cooked) with all the wonderful flavors to make what tastes like a meaty lasagna… But is 50% veggies!

Ingredients for lasagna vary, but I try to keep them traditional… As an Italian woman I don’t want to anger my ancestors (wink).

One of the ingredients of lasagna you may find out of the norm of the traditional American Lasagna Recipe, is the mascarpone cheese. This traditional lasagna ingredient is what gives this lasagna with zucchini and sausage its signature, traditional flavor. So try it, I guarantee you will never go back!

Another ingredient you may not be familiar with, are the lasagna noodles. I use no-cook lasagna noodles. They will save you time and perhaps even you sanity, as dealing with cooked lasagna noodles is the hardest part of making baked lasagna.

How to Make Healthy Lasagna

If you want to make this a vegetarian lasagna, I’ve included modifications below.

This lasgne recipe is easy and quick to whip up. All it takes is a little bit of chopping and then a couple minutes of layering.

How to Make the Best Lasagna Recipe:

  1. Preheat the oven to 375 degrees.
  2. To a large bowl, combine the crumbled sausage, zucchini, mushrooms, and mascarpone cheese. Mix together so the cheese covered all of the ingredients.
  3. Spread 1/3 cup of marinara to the bottom of a 9×9 casserole dish.
  4. Layer as follows: 2 lasagna sheets, 1/2 the sausage and veggie mixture, 2 lasagna sheets, 1/3 cup marinara sauce, the remaining sausage and veggie mixture, 2 lasagna sheets, and then the rest of the sauce. Finally cover the top with the mozzarella cheese.
  5. Cover the lasagna with foil, and bake in the oven for 30 minutes. Uncover and bake for an additional 20 minutes.
  6. Remove from the oven and let it rest for 20 minutes (this will keep it from falling apart).
  7. Cut into 4 pieces and serve.

Lasagna Eggplant Recipe: (Vegetarian Lasagna Modification)

  1. Chop one cup of eggplant.
  2. Cover a cookie sheet with paper towels, and spread the egg plant out on them.
  3. Sprinkle with one tablespoon of salt, cover with more paper towels.
  4. Let rest and “sweat” for 1 hour (or longer) to remove most of the liquid.
  5. Use this in place of the sausage in the recipe below.
