How to Make Riced Cauliflower:

  1. Cut the florets off a head of cauliflower and discard the center.
  2. In small batches, add the cauliflower florets to a food processor and pulse until the size of rice, being careful not to over blend.
  3. Move to a large bowl, and continue ricing the cauliflower in small batches until through.

How to Make Cauliflower Fried Rice:

  1. Spray a a hot wok or large skillet with olive oil and add the eggs (or crumbled tofu). Scramble in the pan and then transfer to a clean bowl.
  2. Add in onion, and any protein (pork, chicken, shrimp) and cook until protein is cooked through. About 5 minutes.
  3. Mix in the peas, carrots, corn, and garlic cook for 3 minutes.
  4. Add the Cauliflower Rice and cook for 5-6 minutes until crispy around the edges.
  5. Top with soy sauce, sesame oil, salt and pepper and the scrambled eggs. Toss well and cook until Cauliflower rice is hot. Then top with green onions and serve hot.

  • 2 green onions sliced
