I went into the kitchen one night planning on making some Peaches and Cream Cookies but I was out of dried peaches, I looked around and saw dried cranberries and thought what the heck it will be easier anyway… no chopping peaches!
These cookies came out even better than my Peaches and Cream Cookies and my Cherry Garcia Cookies combined! I sent them with my husband to work and everyone there loved them.
This is a trick I highly recommend, if you want to make cookies have a reason to make them! A party, bake sale or just to have fun with the kids on a rainy Sunday afternoon. Just make sure to get rid of them if you don’t think you can control yourself. Take them to work, to the Day Care, to the admin office at your kid’s school. Everyone will love them and love you for your thoughtfulness!
Makes 30 cookies.
- ¾ cup organic all-purpose flour
- ½ tsp baking soda
- ¼ tsp sea salt
- 2 tbsp unsalted butter at room temp
- 1 cup packed light brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 3.5 oz container of peach baby food
- 2 cups quick oats
- ½ cup white chocolate chips
- ½ cup dried cranberries
Cover 2-3 rimmed baking sheets with foil and spray with baking spray.
In a small bowl combine flour, baking soda and salt. In a large bowl or standing mixer whip butter and sugar, add in egg and vanilla. Add in baby food and ⅓ cup of water and mix, add the flour mixture until just combined. Add in the oats, white chocolate and cranberries mix until just combined. Place in fridge for 15 minutes.
Pre-heat oven to 350, using a spoon scoop ping-pong ball sized dollops of cookie dough, give enough room for a little spreading. Bake for 10- 15 minutes until golden brown.
