I made these healthy tostadas with lean ground beef, but you could use ground turkey, chicken, bison or beyond meat to make them.


These low calorie tostadas make a great quick dinner for busy weeknights! I like to make the meat ahead of time, and then all I have to do is reheat and serve on really hectic school/work nights.

As I noted above, you can use any meat (or beyond meat) to make these healthy tostadas. I used ground beef (it was a reader recipe request) so the calories will be slightly higher than if you used turkey, chicken or beyond meat (bonus!)
If you don’t want to mess with chopping the tomato, onions and cilantro, get some fresh pico de Gallo salsa in the refrigerated section at your grocery store. It’s basically the same thing, but marinated together, yum.

- Lean ground beef (or turkey, chicken, bison, beyond meat)
- Homemade Taco Seasoning (or store-bought)
- Refried beans
- Tostadas
- Roma tomato
- White onion
- Cilantro
- Cotija cheese
How to Make Healthy Tostadas
You can meal prep these tostadas. I like to make the meat and add it to a glass container, move the beans to a separate container, and add the veggies and cilantro to a third container.
I stack them in the fridge, and then when dinner rolls around all I need to do is reheat a couple portions and serve. It’s a time saver for this busy single mom!


How to Make Healthy Tostadas:
- Add the ground beef to a skillet and brown over medium heat.
- Drain off any oil, add in the taco seasoning and 1/4 cup of water and cook until absorbed.
- Meanwhile, add the beans to a pot and heat over low heat.
- To each toasted add beans, then meat.
- Top with tomato, onion, cilantro and cheese.
- Serve hot.

- 8 tostadas
- 1 roma tomato diced
- ¼ white onion diced
- 2 tablespoon chopped cilantro
- 3 tablespoons crumbled Cotija cheese
