  1. Pour the drippings from the chicken or turkey pan into a degreasing cup and set aside. (This step is optional)
  2. Add butter (or fat from degreasing cup) to a large sauce pot and melt over medium heat. Add in the flour and whisk to create a roux. Mix until it browns.
  3. Add in the broth, and 1/4 to 1/2 cup drippings (optional) and cook until thick, about 10 minutes.
  4. Add in the Worcestershire sauce and pepper and mix well.
  5. Serve hot over chicken, turkey, mashed potatoes, etc.
