Pesto with eggs is an easy and quick breakfast that’s packed with flavor and nutrition.

We (here at Lose Weight By Eating) are all about Whole Foods, balanced with healthy fats, protein and a little heathy carbs to keep you full for hours. But as we noted above, you can absolutely make this pesto eggs recipe without the bread!

Healthy Pesto Egg Toasts

How Make Pesto Eggs:

  1. Spray a medium pan (for 2 servings, or large for 4 servings) with olive oil and heat over medium heat until hot.
  2. Add the homemade pesto to the pan, and spread out in an even layer.
  3. Cook the pesto for 2-3 minutes until hot.
  4. Once hot, crack the eggs right into the pan atop the pesto, giving them each a bit of space to cook.
  5. Sprinkle with salt, pepper, and red pepper flakes (if using).
  6. Cook the eggs for 4 to 5 minutes (for runny eggs). Or 6-8 minutes for over medium, or 9-11 minutes (for over hard eggs).
  7. Meanwhile, toast the bread to desired doneness.
  8. Using a spatula, scoop the eggs and pesto from the pan, and place atop the toast.
  9. Serve hot.
