Healthy Chili Cheese Omelet

Talk about a Manly Meal! I made this Healthy Chili Cheese Omelet for my husband on Father’s day and it was delicious. I made the chili the night before for dinner and used the left overs for breakfast, saves time and money!

Make this dish for the man in your life and he will fall in love with you all over again! So often I make salads and vegetarian meals, so when I make something hearty like this my husband really appreciates it, do the same for your man make him feel special.

Makes 2 Healthy Chili Cheese Omelet servings.

  • 4 Eggs
  • 1/4 cup Sharp Cheddar
  • 1/2 cup Spicy Chili
  • 1 Jalapeno thinly sliced, ribs and seeds removed if you don’t want to super spicy

Get started:

Healthy Chili Cheese OmeletIn a medium sauce pan re-heat the chili on medium low. Heat a small pan on medium and spray lightly with cooking spray. In a medium bowl whisk 2 of the eggs and a tablespoon water. Add to the pan and once the eggs start to set up (you will see bubbles on top) add half of the cheese and a few jalapeno rings to half of the omelet (jalapenos are optional but remember they boost metabolism!) and flip over the other half. Cook for a minute or two on that side then flip and cook for another minute or two and place on a plate, top with chili and some jalapeno rings. Then repeat for the second omelet. Serve this Healthy Chili Cheese Omelet with my Blended Mocha Cappuccino and you have a super fancy meal for your man 🙂 Or serve with my Sparkling Tequila Sunrise for a Sunday Brunch.

After reading your “about Audrey” page, I felt like I was reading about myself for the past 15 years. However, my problems began when I contracted Lyme disease. Anyway, I just started your plan today! I am very excited. I will be eating your healthy cheese omelet recipe often (but with homemade salsa instead of chili) and I wanted to know your thoughts on natural eggs vs. egg beaters. Thanks, Judi
