Everything You’ll Need

  • 1 (24-ounce) bag unpeeled golden baby potatoes (New Potatoes)
  • Olive oil spray
  • 1 head of garlic
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon chopped fresh rosemary (optional- more seasoning options below in recipe card)

Healthy Roasted Baby Potatoes Meal Prep and Storage

Uncooked Meal Prep – Clean the potatoes, spray with olive oil and toss in spices. Place in a gallon bag, or ideally in a baking dish with a cover. Cook as directed (will hold uncooked for 5-6 days in the fridge).
Cooked Meal Prep – Cook the potatoes according to the directions, then allow to cool completely. Add single servings into individual containers, or family sized servings into a large container. 
Frozen Leftovers – Cooked potatoes will hold in the freezer for 1 month.
Refrigerated Leftovers – Will hold in the refrigerator for 4 days.
Reheating – Add to the microwave for 2-3 minutes (defrosted) or 4-6 minutes (frozen) or add to a baking sheet covered with parchment paper and bake defrosted potatoes for 10-15 minutes in a hot oven (350-400 degrees). Cut one in half to check that it is warmed through before serving.

  • 1 (24-ounce) bag unpeeled golden baby potatoes (New Potatoes)
  • Olive oil spray
  • 1 head of garlic with 1/3 of the top trimmed off
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon chopped fresh rosemary optional

  • Preheat the oven to 400° and line a rimmed baking sheet with parchment paper.
  • Add the potatoes to the baking sheet along with the garlic, and rosemary. Spray with olive oil and sprinkle with salt, and pepper.
  • Bake on the bottom rack of the oven, shaking every 5 minutes to prevent burning, until fork-tender (about 25 minutes).
