Fruit and Nut Spinach Salad with Mustard Vinaigrette

This delicious salad is not only fast and easy, it also boosts your metabolism! Spinach and apples boost your metabolism, plus add a lot of fiber to your meal and fiber means fullness.

A note on making your own salad dressing, because you are not going to cook any ingredients you want to use the best, freshest ingredients you can find. Use fresh lemon juice and good olive oil these will add so much flavor. When I talk about good Extra Virgin Olive Oil I mean the peppery kind, it will have a LOT of flavor. You can usually pick up good olive oil and fancy vinegar at your local farmer’s market or sometimes in the produce section of your grocery store.

Now, once you have purchased these good ingredients use them sparingly, don’t use this good olive oil or vinegar if you are going to do any cooking with it, the flavor will be lost and cooked off. So get cheap Extra Virgin Olive Oil for cooking with and save the good stuff for dressings and topping foods.

Serves 2-

Spinach SaladFor the salad:

  • 2 cups Baby Spinach
  • 1 cup Arugula
  • 1 Apple finely sliced- I like Fuji
  • 3 tbsp Dried Cranberries
  • 2 tbsp Walnuts
  • 1 tbsp Goat Cheese- Blue Cheese and Feta will also work nicely

For the Mustard Vinaigrette:

  • 1/2 cup Red Wine Vinegar- I used Zinfandel Vinegar
  • 2 tbsp Lemon Juice
  • 2 tsp Spicy Brown Mustard
  • 1/2 tsp Salt
  • 3 tsp good Extra Virgin Olive Oil

In a bowl, shaker or even old mason jar combine all the vinaigrette ingredients and shake or whisk, then set aside. Do several hours or a day ahead if you can, it will have more flavor.

On a platter or two plates rip the spinach into bite sized pieces and place on plate, do the same with the arugula and place on top of the spinach. Now add the apples, cranberries and drizzle on the vinaigrette. Top with the walnuts and cheese and serve.
