  1. Spray a skillet with olive oil and heat over medium-high heat. Add the pork chops and brown on both sides. Then add to the slow cooker.
  2. Sprinkle the pork chops with salt and pepper and add in the remaining ingredients.
  3. Cover and cook the crockpot pork chops for 3-4 hours on HIGH or 6-8 hours on LOW.
  4. 30 minutes before serving, move the pork chops to a plate, then mix the veggies together so the sauce develops. 
  5. Add the pork chops back to the slow cooker, and cook for the remaining 30 minutes uncovered.
  6. Serve hot over mashed potatoes or along side a crisp salad.
