I like to get red onions, yellow and red bell peppers, and green jalapeños. This way I have a very colorful skillet of fajitas.

But you can use any color of onions, or bell peppers. This recipe is very versatile and will work with any color.

  1. In a gallon freezer bag combine the cayenne, chili powder, oregano, garlic powder, salt, and lime juice. Mix well then add in the sliced chicken and mix again. 
  2. Place the bag in the fridge to marinate for 1 to 12 hours. 
  3. Heat a large skillet over medium-high heat. Spray with olive oil and add in the bell peppers, onions and jalapeño. Cover and cook for 5 minutes, mixing once. 
  4. Push the veggies to the sides and add in the chicken and marinade. Cook for 10 minutes flipping the chicken once. 
  5. Mix the veggies and chicken together and cook until the onions and bell pepper are soft and the chicken is cooked through, about 10 to 15 minutes. 
  6. Serve hot with your favorite toppings, over corn or flour tortillas.
