Have a craving for ice cream? One of my readers did and asked for something to satisfy her sweet tooth. Did you know that when you freeze bananas they have a consistency close to ice cream? There is even a special ice cream machine that turns bananas to ice cream. Well that was my motivation here, and with some left over candy from Christmas this was a perfect late night snack. I got this idea some time back from a great cookbook Pretty Delicious, but I made it my own and here it is for you, put whatever toppings you have or just chocolate, have fun!
Makes 4 servings.
- 1 banana
- ⅛ cup semi sweet mini chocolate chips
- 1 tsp Extra Virgin Olive Oil
- Whatever toppings you desire
Cover a plate with parchment paper. Slice banana into 20 bite size pieces, place spread out on the plate. Put the chocolate chips in a microwave safe bowl or coffee cup and heat in 10 second intervals stirring in between each time until it is a silky smooth chocolate pool. Add the oil to the chocolate (keeps it liquid so you can work with it) and mix, now decorate the bananas, I like to “Pollock” the entire plate then go back and dollop some over the top of each. You are the artist, have fun decorating! Once the chocolate and toppings are on the bananas place the plate in the freezer for at least one hour.
