This zucchini patties recipe is easy to make with nothing more than a bowl and a box cheese grater!

It is important to squeeze out the moisture from the zucchini, so use a kitchen towel, cheese cloth or paper towels to get them good and dry… otherwise you’ll have soggy fritters!

How to Make Healthy Zucchini Patties:

  1. Preheat oven to 425° and line 2 baking sheets with parchment paper.
  2. Use a box grater to grate zucchini into a large bowl.
  3. Move the zucchini onto a piece of cheese cloth, or into a clean kitchen towel and squeeze as much of the moisture out as you can.
  4. Add the zucchini, egg, shallot, flour, salt and pepper to the bowl and stir to combine.
  5. Use a 1/4 cup measuring cup to scoop the zucchini mixture. Roll in wet hands into balls.
  6. Place on the prepared baking sheet and press down into patties.
  7. Spray with olive oil and place in the hot oven
  8. Bake for 10-12 minutes, flip, spray the tops with olive oil and bake for an additional 10-12 minutes.
  9. Serve hot or cold with sour cream, Greek Yogurt or one of the healthy dips below.
